Lettuce Salad

This is the kind of thing I always have the ingredients for in my fridge. It comes together in minutes, looks and tastes amazing. Not every recipe (especially a salad!) should be a production. Sometimes simple is delicious.

This isn’t so much a recipe as it is a suggestion for a super simple salad that works every time. Use the quantities that work for you.

INGREDIENTS: Mix together, one or more of the following:

  • Romaine lettuce 
  • Romaine hearts
  • Bibb lettuce 
  • Lambs lettuce
  • Rocket 
  • Watercress

Together with:

  • Finely shaved fennel – best done with a mandoline, but if you don’t have one a sharp knife will do. 

Add:

  • Thinly sliced radishes.

Dress with:

  • The best olive oil you can get your hands on
  • Fresh lemon juice 
  • Flakey sea salt 
  • Ground pepper 

Top with optional:

  • Toasted, roughly chopped walnuts

METHOD:

  1. Prepare the vegetables: Wash and dry the lettuce, fennel, and radishes. Slice the fennel and radishes thinly. Combine all in a large serving bowl.
  2. Dress the salad: Just before serving, drizzle with olive oil and fresh lemon juice. Season with flakey sea salt and ground pepper.
  3. Add toppings: Sprinkle with toasted walnuts if using. Serve immediately.
