We have a few wonderful customs associated with Hanukkah: frying in oil to commemorate the miracle of oil that lasted for 8 days when it should have only lasted a day; the eating of dairy to commemorate the Jewish heroine Judith and her besting of the General Holofernes; and of course, the gathering of people, be it family, friends, or the community.
The latkes grazing board celebrates all of that in the form of a board overflowing with cheeses, vegetables, the delectable Chrain-cured Salmon, and of course, the hero of the dish: Classic Potato Latkes. Build your dish with whatever you like; we used a combination of fresh and pickled vegetables, cream cheeses and sour cream, homemade cured salmon, and store-bought smoked salmon. Alternatively, you can go with a meaty board with loads of different cold meats, or a sweet latkes board with applesauce, fresh fruit, and sour cream.
The only thing to really keep in mind is that Hanukkah is a celebration, and your grazing board is just a small element of the very best part of Hanukkah: families coming together, celebrating the miracles of our people.
